    Prep dark soy sauce + oyster sauce + mirin + shirodashi + rice wine vinegar + sugar (brown or palm) and set aside.

    Prep baby trumpet mushrooms (sliced) + sweet onion (sliced into 3/4 in thick juliliened segments) + napa cabbage (rough chopped) + green onions (cut into 1 inch segments) and set in individual bowls.

    Cook udon noodles for about 30 seconds to one minute in boiling water.

    Rinse under cold water.

    Toss with sesame oil to prevent sticking.

    Season wok over high heat and throw out seasoning oil.

    Stir fry ground pork over high heat in oil , set aside.

    Stir fry sweet onion and baby trumpet mushrooms until browned.

    Add napa cabbage and green onions for about a minute.

    Cabbage should wilt slightly but still be crisp.

    Add ground pork and udon noodles and season with MSG and salt .

    Add sauce and stir fry until thickened, about ⏱️ 1 minute .

    Cut the heat and add garlic (finely chopped) and toss.
